I enjoy feeling good about what I am putting into my body and have a fairly high standard of what constitutes "good." This is my FAVORITE salad. I love the colors, texture, and full flavor. It's also packed with nutrients, so a win all around. Here are the ingredients:
- 1 Large shredded Carrot
- 100 grams of Pickled Beets
- Sliced Avocado
- Chopped Red Onion
- Hard Boiled Egg
- Lettuce/Greens
- Salt
- Pepper
- 1 Tablespoon of Stoneground Mustard
- Drizzle of Red Wine Vinegar
After I've chopped all of the veggies, I throw everything together on a plate, mix it up, and dig in! Super easy. Let me know what you think!
