Today, I woke up refreshed! I set my intentions and goals for the day as I drank my coffee and then headed out on an 8-kilometer loop for a run through the countryside and town. It was gorgeous and such a peaceful way to start the day.
To my delight, the loop ended close to Burren College of Art, so I stopped by to say hello to Julia, Karen, and Dr. Newman. It was so nice to talk to some familiar faces. They were warm and welcoming.
I continued back to my apartment for lunch and a shower. The water pressure and temperature are both adjustable by a small box in the shower, which is very nice, but I need to figure out how to find a happy medium. I am REALLY GOOD at getting scalding hot or chilly water to come through...oh well!
After getting showered and fed, I did some more work, and then decided to go out and take pictures because the sunset was too gorgeous and inviting. I threw on a top and some red lipstick and dorked my way into another solo-shoot.
It was beginning to get dark when I headed in to make dinner. I baked carrots and onions as a side to my protein bar...not the combo everyone would choose, but hey! I got all my nutrients in, so I'd call it a win. I mixed sliced onion and carrots with salt, pepper, olive oil, and basil. Then I drizzled a little red wine vinegar on top and popped it in the oven. While my carrots cooked, I reassembled my bike.
It took about 30 minutes for me to finish putting together all of the parts. As I worked, I watched Ireland's version of Miss America. It was interesting and fun to watch--even though I am not the biggest pageant fan.
The smell from the carrots was marvelous, I allowed them to slightly char and they tasted fantastic! Another great day for the books. I love this place.
